Ueker family caramel recipe

Make some homemade caramels this holiday season! You can enjoy making this yummy treat with some Christmas music as you bake them. Be sure not to rush this recipe, but the final result will be well worth your time!

yields about 150 caramels

 

Ingredients:

4 cups heavy cream

1 cup sweetened condensed milk

4 cups light corn syrup

4 cups sugar

1 teaspoon of salt

1/2 lb unsalted butter (cut into 16 pieces)

1 tablespoon and 1 teaspoon vanilla extract

vegetable oil cooking spray

 

Directions:

1. Spray an 11 and 3/4 by 16 1/2 inch baking pan with cooking spray.

2. In a 2-qt saucepan, combine cream and milk; set aside.

3. In a 6-8 qt saucepan, combine corn syrup, 1 cup water, sugar and salt. Cook over a high heat until dissolved (8-12 mins)

4. Stop stirring, reduce to medium [heat] and bring to a boil.

5. Cook to hard ball (250 degrees), 45-60 minutes.

6. Meanwhile, cook cream mixture over low heat until warm. when sugar reaches 250 degrees, slowly stir in butter and cream, keeping mixture boiling at all times.

7. Cook over medium heat until 244 degrees (firm ball stage, 55-75 mins).

8. Allow 24 hours to set.

9. Cut and wrap in cellophane or waxed paper.
